Description
Puya is similar to Guajillo, only smaller and more potent. Its shiny, dark red color and thin flesh contain a light, fruity flavor. This tapered pod measures five inches long and three quarters inches wide. Puya is grown in Zacatecas and has a SHU range of 5,000-8,000. It is a favorite pureed into sauce, fried for chile oil, or in soups.
