Description
Guajillo, one of the most common chiles, is deep red with a thin flesh. Its elongated, tapered and twisted shape is shiny and smooth. Guajillo is moderately hot with a slightly berry fruit flavor and a SHU range of 2,000 to 8,000. It is grown in Zacatecas, Durango, and Aguascalientes. Guajillo is primarily used in sauces and salsas.
