New Mexico Flakes

New Mexico is a bright, intense, red chile pepper. It is very thin-fleshed with earthy flavors and dried cherry tones. The heat is crisp and clear. Although they resemble the California chile, they are hotter and more flavorful with a SHU of 2,500 to 8,000.
