Guajillo without Stems

Guajillo, one of the most common chiles, is deep red with a thin flesh. Its elongated, tapered shape is shiny and smooth. Guajillo is moderately hot with a slightly fruity flavor and a typical SHU range of 1,000 to 8,000. It is predominantly grown in Zacatecas, Durango, and Aguascalientes.
